Ingredients
- 1/2 cup white wine vinegar
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon thyme
- 3 cloves garlic, pressed
- 4 fish fillets
- Black pepper, to taste
- 1/4 cup whole wheat flour
- Water/oil mixture
- Lemon wedges

Preparation
Step 1
In a large zipper-topped plastic bag, combine first 7 ingredients (vinegar through garlic); add fish, seal bag and carefully move it around to coat the fish; refrigerate for at least 1 hour. On a dinner plate, combine flour and pepper to taste; very lightly dredge fish on both sides. Heat water/oil mixture in a large skillet over medium-high heat; cook fish for 3 to 5 minutes per side or until it flakes easily when tested with a fork. Serve with lemon wedges.
SERVING SUGGESTION: Steamed red skinned potatoes and steamed green beans tossed with a little olive oil and slivered almonds.
