Step 1
1.Heat oven to 425 degrees F. In a blender, purée the eggs, milk, flour, vanilla, salt, and 1 tablespoon granulated sugar until combined; set aside. Place a 12-inch cast-iron or oven-safe skillet in the oven to heat up.
2.In a large skillet, melt 2 tablespoon butter over medium heat. Add the apples and cook, stirring occasionally, until the apples are just beginning to brown, 2 minutes. Add the remaining 3/4 cup granulated sugar. Stir in the lemon juice and ginger. Cook until just tender and the juices slightly thicken, 5 to 6 minutes.
3.Carefully remove the skillet from the oven and add the remaining 1 tablespoon butter. Once the butter has melted, pour in the batter. Return this to the oven and bake until puffed and golden, 10 to 12 minutes. Transfer to a plate, spoon apples over half the pancake and fold over. Sprinkle with confectioners' sugar, if desired, and serve immediately.
