Orange Coconut pie

Ingredients

  • 3/4 cup orange juice
  • 1 cup sugar
  • 3 T cornstarch
  • 3 T flour
  • 1/4 t salt
  • 1 1/2 pcup water
  • 3 egg yolks lightly beaten
  • 3 \4 cup flaked coconut
  • 2 T butter
  • 1 T grated orange peel
  • 2 T lemon juice
  • Pie shell
  • 3 egg whites
  • 1/2 T vanilla
  • 1/2 T cream of tartar
  • 6 T sugar

Preparation

Step 1

Combine sugar, cornstarch, flour and salt. Gradually stir in water and orange juice til smooth. Cook and stir over med high heat til thickened and bubbly. REDUCE HEAT and cook 2 mins more. Remove from heat.
Stir small amounts into egg yolks. Return to pan. Ring to gentle boil cook and stir 2 more mins. Remove from heat. Stir in coconut, butter, orange peel and lemon juice. Pour into pie shell.
Make meringue and top pie. Bake 350 deg for 12-15 mins. Cool one hour then refrigerate at least 3 hours before serving.
