    cup orange juice

  • 1

    cup sugar

  • 3

    T cornstarch

  • 3

    T flour

  • 1/4

    t salt

  • 1 1/2

    pcup water

  • 3

    egg yolks lightly beaten

  • 3

    \4 cup flaked coconut

  • 2

    T butter

  • 1

    T grated orange peel

  • 2

    T lemon juice

  • Pie shell

  • 3

    egg whites

  • 1/2

    T vanilla

  • 1/2

    T cream of tartar

  • 6

    T sugar

Directions

Combine sugar, cornstarch, flour and salt. Gradually stir in water and orange juice til smooth. Cook and stir over med high heat til thickened and bubbly. REDUCE HEAT and cook 2 mins more. Remove from heat. Stir small amounts into egg yolks. Return to pan. Ring to gentle boil cook and stir 2 more mins. Remove from heat. Stir in coconut, butter, orange peel and lemon juice. Pour into pie shell. Make meringue and top pie. Bake 350 deg for 12-15 mins. Cool one hour then refrigerate at least 3 hours before serving.
