Ingredients

  • 1 can (16 oz.) salmon
  • 1 pkg. (8 oz.) cream cheese, room temp.
  • 1 tbsp. lemon juice
  • 2 tsp. grated onion
  • 1/3 c. finely chopped pecans
  • 4 tbsp. chopped parsley
  • chopped green onions or sliced green pepper, optional
  • crackers
  • sliced tomatoes, optional

Step 1

Drain salmon and remove bones. Combine salmon with the cream cheese, mashing together with a fork until blended. Stir in lemon juice, and onions. Mix well. Add pecans and 1 tbsp. of the parsley until well combined. Transfer to serving dish. Chill to blend flavors. Sprinkle with parsley or sliced green onions before serving. Or shape into a 2-inch high loaf. Wrap tightly with foil and freeze for 24 hours. Before serving, defrost in the refrigerator for 2 to 3 hours. Top loaf with remaining chopped parsley, green onions or green pepper. Serve with crackers, sliced tomatoes and green peppers, if desired.
