Ingredients
- 1 can sweet potatoes or yams
- 2 cups premade waffle mix
- 2 large eggs, separated
- 1/3 cup chopped pecans, if desired

Preparation
Step 1
1. Puree sweet potatoes with their liquid and milk.
2. Preheat waffle iron. Mix waffle mix, sweet potato mix and egg yolks (save whites) in a large bowl. Stir in pecans if desired.
3. Beat egg whites until they hold their shape and fold into the waffle batter; set aside for 5 mins.
4. Spray waffle iron. Pour 1/3 of the batter onto hot iron.
