Ingredients

  • 2 t. olive oil
  • 1/2 c. finely chopped onion
  • 2 cloves garlic, minced
  • 2 (28 oz) cans plum tomatoes, undrained and chopped
  • 1/4 c. chopped fresh basil
  • 2 t. minced fresh oregano
  • 1/8 to 1/4 t. pepper

Preparation

Step 1

Heat oil in large skillet until hot. Add onion, saute until tender. Add garlic, saute 1 minute. Stir in tomatoes, and bring to a boil. Add remaining ingredients; stir well. Reduce heat to medium low and cook, uncovered 1 hour and 20 minutes or until thickened, stirring frequently. Serve over cooked pasta.

Fiery Tomato and Red Pepper Sauce:
Add 1/4 t. crushed red pepper with last 3 ingredients.

Tomato and Mushroom Sauce:
Add 2 cups chopped fresh mushrooms to onion mixture. Stir in tomatoes and bring to a boil. Add remaining ingredients, and stir well. Reduce heat to medium low and cook uncovered 1 hour and 30 minutes or until thickened, stir frequently. 4 cups
