Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breast halves
- 2 small zucchini, cut into 1/4 inch slices
- 1 (14-1/2 ounce) can stewed tomatoes
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder

Preparation
Step 1
In large skillet, heat oil over medium-high heat. Add chicken and cook until browned on both sides, about 10 minutes. Drain off excess fat. Add remaining ingredients.
Reduce heat to medium-low, cover, and cook 20 to 30 minutes, or until chicken is fork-tender and no pink remains, stirring occasionally.
