  • 1 (10 ounce) package frozen chopped spinach, thawed, drained
  • 1 1/4 cups coarsely grated Parmesan cheese
  • 1 cup mayonnaise
  • 1 clove garlic, crushed
  • 8 to 10 artichoke hearts, coarsely chopped
  • green onions, chopped
  • Butter crackers

Step 1

Squeeze the excess moisture from the spinach. Combine the cheese, mayonnaise, garlic, artichokes and spinach in the order listed in a bowl, mixing well after each addition. Spoon into an ungreased quiche dish or baking dish and press lightly. Bake at 325 degrees in a preheated oven for 25 to 30 minutes or until brown and bubbly. Sprinkle with chopped green onions. Serve warm with butter crackers.
