Ingredients
- 1/2 pound penne pasta
- 1/4 cup and 1 tsp olive oil
- 1 bunch asparagus, cut into 1 1/2" pieces
- 3 tbs lemon juice
- grated rind of 1 lemon
- salt & pepper
- 1 jarred red pepper, sliced
- 2 tbs pine nuts

Preparation
Step 1
Cook pasta, toss with 1 tsp olive oil and chill. Simmer asparagus in 1/2 cup water until tender. Put into ice water. Toast pine nuts. Mix together lemon juice, zest, salt & pepper and 1/4 cup olive oil. Add asparagus, drained red pepper, pine nuts and pasta.
