Rhubarb Lemonade Concentrate

Ingredients
- 3 cups water
- 3 cups sugar
- 4 cups rhubarb juice
- 3 Tbsp. lemon rind, grated
- 1 1/2 cups lemon juice

Preparation
Step 1
Put all ingredients in large pot and bring to a boil.
Simmer for 10 minutes, stirring until sugar is dissolved.
Let cool. Remove lemon rind with a slotted spoon. When ready to serve, mix 3 parts water to 1 part rhubarb lemonade concentrate.
IF USING FRESH RHUBARB
Stir together water, sugar, rhubarb (8 cups chopped) and lemon rind; bring to a boil. Reduce heat to medium-low. Simmer for 10 minutes. Remove from heat, stir in lemon juice. Strain liquid through seive.
