This was very good for both. I used a salmon steak that I poached. I didn't use this dressing because I had 1/4 cup of Sauce Ravigote in the fridge which I supplemented with a tablespoon of mayo, but I think we'd like the lemon juice version too.
13/07/16 - Update - I added a thinly sliced radish, baby cucumber and some shredded carrot to the mix which didn't go over all that great with D - just add that to your portion or top it with.

Ingredients

  • 8 oz. salmon, poached and flaked or 1 can of Cloverleaf salmon, drained and flaked
  • 1/4 cup minced red onion or 2-3 green onions
  • 1 stalk of celery, very finely minced
  • 2 tablespoons lemon juice + zest
  • 1 tablespoon extra-virgin olive oil
  • freshly ground pepper
  • 2 tablespoons chopped fresh dill
  • 4 tablespoons low-fat cream cheese or whipped cream cheese or spreadable goat cheese
  • rye or marble rye or hot dog rolls or slider buns, to serve
  • 2 large leaves romaine, cut in half, if making a sandwich

Preparation

Step 1

Combine dressing ingredients in a medium bowl; add fish and toss gently to mix with the dressing.

Toast rolls, if desired. Spread 1 tablespoon cream cheese on each of 4 slices of bread. Spread ½ cup salmon salad over cream cheese. Top with 2 tomato slices, a piece of lettuce and another slice of bread.

Try topping with a few slices of not overripe avocado, thinly sliced.

Some pickles on the side would work.
