Preheat oven to 400º. Lightly grease 18 muffin cups.
In a large bowl, lightly beat the egg. Add cornmeal mix, buttermilk, and oil. Stir until ingredients are just blended. Stir in cheddar cheese, chipotle peppers, and adobo sauce. Spoon mixture into prepared muffin cups. Bake for 25 to 30 minutes or until muffins are golden brown.
