PIE - KEY LIME

Ingredients
- 11 graham crackers
- 2 T. sugar
- 2 oz. (1/2 stick) melted unsalted butter
- 4 eggs, separated
- 14 oz. can sweetened condensed milk.
- 3 oz. Key West Lime Juice
- Grated peel (zest) of 1 green lime
- Whipped cream

Preparation
Step 1
1. With a rolling pin, crush graham crackers to make 1 1/2 cup crumbs. Combine with sugar and butter. Press mixture evenly into 9" pie pan. Refrigerate for 1 hour.
2. Preheat oven to 350°F.
3. Separate 4 eggs, saving the whites for another use. Combine the yolks and sweetened condensed milk. Beat well. Add gradually, while stirring, Key West Lime Juice and the grated peel(zest) of 1 green lime. Stir until smooth and creamy.
4. Pour into prepared crust and bake for 10 minutes. Chill until serving.
5. Serve chilled with whipped cream.
