  • 1/2 cup unsalted butter, softened
  • 8 oz sharp Cheddar cheese, grated
  • 1 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup finely chopped pecans
  • 1/2 tsp ground red pepper

Preparation

Step 1

1. With an electric mixer on low speed, beat butter. Add cheese; mix well. Add flour and salt; mix well. Stir in nuts by hand.

2. Divide dough in half, roll into 2 logs, about 1 1/2 inches in diameter. Wrap in plastic wrap and chill in the refrigerator for at least one hour, and preferably overnight.

3. Preheat oven to 350 degrees F.

4. Slice chilled dough into 1/4-inch slices and place on parchment-lined baking sheets.

5. Bake for 15 to 17 minutes, or until crisp and golden brown. Cook on a wire rack and store in an airtight container.
