Ingredients

  • 7 cups sugar
  • 4 cups finely chopped, peeled ripe peaches (about 3 lbs)
  • 1/4 cup lemon juice
  • 2 finely chopped chipotle chile peppers in adobo sauce
  • 1/2 of a 6 oz. package (1 foil pouch) liquid fruit pectin

Preparation

Step 1

In a heavy pot, combine sugar, peaches, chipotle peppers, and lemon juice. broing to boiling, stirring constantly until sugar dissolves.

Quickly stir in pectin. bring to a full rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly. Remove from heat. Quickly skim off foam with a metal spoon.

Ladle into hat sterilized half-pint jars, leaving a 1/4" head space. Wipe jar rims; adjust lids.

Process in a boiling water canner for 5 minutes (start timing when water returns to boiling).

To distribute fruit, cool for about 20 minutes, then gently turn and tilt jars without inverting them; repeat as needed.
