  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup passion-fruit juice
  • 6 tbsp. unsalted butter, cut into small pieces
  • 2 boxes (2.1 oz each) frozen mini phyllo shells, thawed Fresh blueberries, confectioners' sugar and mint for garnis

Step 1

In medium saucepan whisk together egg and sugar until pale yellow arid foamy. Add fruit juice and butter. Cook over medium high heat, whisking constantly until butter melts and mixture thickens. Strain through medium mesh sieve. Let cool completely. To assemble, spoon mixture into phyllo shells; garnish with a blueberry confectioners' sugar and tiny sprig of mint.
