Ingredients

  • 2 cups grated, peeled zucchini
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 teaspoons vanilla
  • 2 1/2 cups flour
  • 1/2 cup wheat germ
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder

Preparation

Step 1

Mix zucchini, eggs, sugar, oil and vanilla.

In separate bowl, mix flour, wheat germ, salt, baking soda, cinnamon, and baking powder.

Combine wet and dry ingredients and pour into 2 greased and floured loaf pans. Bake for 1 hour, or until toothpick inerted comes out clean, at 325 F.
