Ingredients

  • 3 C. cake flour
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 8 oz. unsalted softened butter
  • 1 1/2 C. sugar
  • 4 lightly beaten eggs
  • 1 C. milk
  • Grated peel of 1 lemon
  • 3 T. lemon juice

Preparation

Step 1

1. Preheat oven to 350°F.

2. Sift together cake flour, baking powder and salt; set aside.

3. With an electric mixer, beat unsalted softened butter and sugar at medium speed for 5 minutes. Slowly add lightly beaten eggs and continue beating for another 4-5 minutes until mixture is thick and double in volume.

4. Using a rubber spatula, carefully fold in the flour mixture by quarters, alternating with thirds of milk, ending with flour. Mix in grated lemon peel and lemon juice.

5. Pour into cake pan and smooth out the surface. Bake in center of oven for 45-55 minutes until top is set and springs back when touched.

6. Remove and let rest for 2 minutes. Turn out on cooling rack.
