Preparation

Step 1

1. In a medium saucepan, heat and stir milk, sugar, butter, and salt just until warm (120 to 130 degrees F) and butter is almost melted; remove from heat. Pour into a large mixing bowl; cool.

2. In a small mixing bowl, combine yeast and warm water; let stand for 5 minutes. Stir yeast mixture into milk mixture. Using a wooden spoon, stir in as much of the flour as you can.

3. turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape dough into a ball. Place in a lightly greased bowl; turn once. Cover; let rise in a warm place for 15 minutes.

4. Preheat oven to 425 degrees F. Lightly grease two 9 x 9 x 2-inch baking pans. Punch dough down. Turn dough out onto a lightly floured surface. Divide dough in half. Divide each half into 12 pieces. Shape each piece into a ball, pulling edges under to make a smooth top. Place 12 balls in each pan. Cover and let rise in a warm place for 15 minutes.

5. Bake in preheated oven for 10 to 12 minutes or until golden. Immediately remove rolls from pans; cool on wire racks.
