Ingredients
- 2 1/2 T. unsalted butter, softened
- 1/2 C. flour
- 6 oz. bittersweet chocolate
- 3 egg yolks
- 4 egg whites
- 1/4 C. granulated sugar
- favorite ice cream for garnish

Preparation
Step 1
1. Heat oven to 400°F. Spread very thin layer of softened butter inside four 5-ounce ramekins. Coat with flour and tap out excess.
2. Melt chocolate and remaining butter together over double boiler or briefly in microwave, stirring often; avoid getting mixture too hot, which will curdle eggs. Whisk in yolks, Set aside.
3. In electric mixer, whip egg whites and sugar together until medium-stiff
peaks form. Fold whites into chocolate mixture 1/3 at a time, mixing in completely. Divide mixture among ramekins, filling each 3/4 full.
4. Bake 9-12 minutes, depending on desired "moltenness." Serve hot with ice cream.
