  • 8 white corn tortillas
  • 6 large eggs
  • 3/4 cup corn
  • 1/2 cup shred pepper-jack chz
  • 1/2 salsa
  • 2 scallions, chopped

Preparation

Step 1

Heat oven to 400. Coat sheets with spray and place tortillas. Spray tortillas and bake for 10 mins.
In a large bowl, whisk eggs, corn, 1/4 cup of chz, 1/4 salsa, half of scallions and salt.
Heat skillet over med-hi-coat pan, add egg mix and cook.
To serve, place 1/4 cup of egg mix on tostada. Sprinkle with chz and scallions.
Serve with salsa, sour and avo.
