Ingredients

  • 3/4 cup sugar, divided (actually used approximately 1/3 cup in pudding and 1/4 cup in icing)
  • 1/3 cup of all-purpose flour
  • dash of salt
  • 4 eggs separated (sit at room temperature before using)
  • 2 cups milk
  • 1/2 teaspoon of vanilla extract
  • 35-45 Nabisco Vanilla Wafers

Preparation

Step 1

Combine 1/3 cup sugar with flour and salt. Stir in egg yolks and milk. Blend well. Cook in top of double boiler until thickened, stirring constantly. Reduce heat and continue cooking for five minutes, stirring constantly. Remove from heat and add vanilla. Put small amount in bottom of dish. Layer wafers, bananas and filling to fill dish.

Icing
Beat egg whites and sugar with mixer. Pile on top of pudding mixture. Cook on 350 degrees for approximately 5 minutes or until meringue is a light, golden brown.
