Gazpacho soup was made for the summer. Refreshingly cold on hot summer days, this classic Spanish cold soup deliciously combines summer's best vegetables.

Ingredients

  • Blend the following ingredients in a blender until smooth.
  • 1/2 cup water
  • 1/2 cup extra virgin olive oil
  • 5 large ripe tomatoes
  • 2 cloves garlic or spicy pepper to taste
  • 1 Tbs. raw honey (dates or raisings work just as well)
  • 1/4 cup lemon juice
  • 1 tsp. sea salt
  • 1 bunch of fresh basil
  • Now that you have the gazpacho liquid, cut the following vegetables into 1/2 inch cubes.
  • 1 large avocado
  • 1 medium bell pepper
  • 5 sticks celery
  • 1 small onion
