Ingredients
- 2/3 cup of butter
- 1 cup of brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups of flour
- ¼ teaspoon of salt
- ½ teaspoon of baking soda

Preparation
Step 1
1. Cream the butter, adding the brown sugar gradually beating well.
2. Add egg and vanilla.
3. Mix flour, salt and baking soda, and incorporate to the dough.
4. Knead in long rolls of 2”.
5. Wrap in waxed paper and refrigerate for 2 hours.
6. Cut in rolls, and place on non-greased cookie sheet.
7. Bake at 350 for 8-10 minutes.
Variants:
Orange: add 1 ½ tablespoon of orange zest.
Chocolate and nuts: add 1 unsweetened chocolate square and add 4 tablespoons of chopped walnuts.
Lemon and Coconut: add ½ lemon extract and 2 tablespoons of coconut flakes.
Turtles: between 2 rolls of dough, place one pecan (head) and 2 halves for feet.
Sables: bake the dough and sprinkle with sugar.
Black and white: bake the chocolate dough and add miniatures marshmallow on top three minutes before the end of cooking.
Jewel: add 2 tablespoons of red or green candied cherries and 2 tablespoons of chopped walnuts.
Spiral: put chocolate dough on white dough, roll and cut in rolls.
Almonds: add ½ teaspoon of almond extract. Before baking add half of almond on each.
