Cheese Puffs, Jalapeno and Pepper Jack

Ingredients
- 3/4 cup butter, diced and divided
- 1 tablespoon minced shallot
- 1 tablespoon minced fresh jalapeno pepper
- 2 teaspoons minced fresh garlic
- 1 cup dark beer, such as Dos Equis Ambar
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon kosher salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup shredded pepper Jack cheese

Preparation
Step 1
1. Preheat oven to 400°. Line 2 baking sheets with parchment paper. Set aside.
2. In a saucepan, melt 1/4 cup butter over medium heat; add shallot, jalapeno, and garlic. Cook, stirring often, until tender, about 8 minutes.
3. Add remaining 1/2 cup butter, beer, pepper, and salt. Cook over medium heat until mixture boils and butter melts. Add flour. Stir constantly with
a wooden spoon until mixture forms a ball and a film coats the bottom of pan, about 3 minutes.
4. Transfer mixture to a stand mixer. Beat at high speed with the paddle attachment for 3 minutes. Add eggs, one at a time, beating well after each addition. Add cheese; mix until combined.
5. Place mixture in a pastry bag fitted with a large star tip. Pipe 1-inch mounds onto prepared baking sheets, at least 2 inches apart.
6. Bake until golden brown, 20 minutes. Serve immediately.
