Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon soda
  • 2 1/2 cups sweetened flaked coconut
  • 30 red or green candied cherries, halved

Step 1

Preheat oven to 350 degrees. Combine butter, sugar, brown sugar, eggs and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low: add flour, baking powder and soda. Beat until well mixed. Stir in coconut. Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Press 1 cherry half onto center of each cookie. Bake for 9 to 13 minutes or until edges begin to brown. Cool on cookie sheet for 1 minute. Remove to wire rack and cool completely. Approximately 5 dozen cookies.
