Ingredients

  • 3

    T. butter

  • cup vegetable oil

  • 6

    tortillas

  • 1

    lb. boneless chicken breasts

  • 2

    cloves garlic

  • can of chilis

  • 1

    cup of chopped tomatoes

  • ½

    bottle mexican dark beer

  • 3

    eggs

  • 1

    cup heavy cream

  • salt and pepper

  • 1

    cup grated cheddar cheese

  • ½

    vidalia onion

  • 2

    T. epazote spice

  • 2

    T. mexican oregano

  • 1

    cup chicken broth

Directions

Saute onion in butter and add spices and garlic. Add chicken and allow to lightly brown on both sides. Reduce heat add chicken broth to cover 1/2 the chicken. Simmer for 1/2 hour or so until you can shred chicken. Prehead oven to 350 degrees. Heat oil in a skillet 1T. at a time. Take each tortilla and warm each side and then place in a 13 x 9 inch pan, lining the pan with each one so it covers the bottom and the sides. Set aside. Shred chicken and spread evenly over tortillas. In a large bowl mix the chilies, tomato, beer, eggs cream, salt and pepper. Pour over the chicken and tortillas. cover with the cheese and if you'd like, decorate with fresh cilantro leaves on the top. I once substituted with a half a jar of cilantro instead of verde sauce the the chicken simmering..It was very good.
