Ingredients

  • 6 ears of corn, unhusked
  • 2 Tbsp fat free mayo
  • 1/4 tsp grated lime zest
  • 2 tsp fresh lime juice
  • 3 Tbsp grated cojita or parm cheese
  • 1/2 tsp ancho chili powder
  • 1/4 tsp ground cumin

Preparation

Step 1

Preheat grill to medium. Remove outer layer of husk without removing the inner layer of silk. Twist off the exposed silk from the top of each cob. Rinse the cobs. Place the corn on the grill rack and grill, turning occasionally until the corn is cooked and the remaining husks are slightly charred. 12-15 minutes.

Meanwhile combine the mayo, lime zert and lime juice in one bowl and the cheese and seasonings in another bowl, set aside.

To serve: remove husks and brush mayo mixture over corn kernels. Sprinkle with cheese mixture.
