Oregano Olive Chicken

Ingredients
- 4 chicken breasts, de-boned and skinless
- 1/4 t pepper
- 2 T EVOO
- 1/2 c white wine or chicken broth (I found this was not enough)
- 1/2 c chopped pimento stuffed green olives
- 1/4 c capers, drained
- 2 T fresh oregano, minced
- 1 T cider vinegar
- 2 cloves garlic, minced
- 1 t fresh thyme, minced

Preparation
Step 1
Sprinkle chicken with pepper. In a nonstick pan coated with Pam cook chicken until brown on all sides.Set aside.
In same pan mix other ingredients and bring to a boil. Add chicken back, reduce heat and simmer 20 minutes or until chicken is tender.
