Ingredients
- 7 T vegetable oil, divided
- 6 T flour
- 8 oz. okra, sliced
- 1 onion, chopped
- 2 ribs celery, diced
- 2 garlic cloves, minced
- 1 can diced tomatoes with jalapeno chiles
- 32 oz chicken broth (lower sodium)
- 8 oz andouille or chorizo sausage
- 1 green bell pepper, chopped
- 1/4 tsp salt
- dash cayenne pepper
- 12 oz shrimp (or chicken)
- 2 T file` powder (thickener)

Preparation
Step 1
Make roux....heat skillet (not nonstick!) over med-high heat until hot. Add 6 T oil. Whisk in flour. Cook and stir constantly 8 minutes or until it turns deep chocolate brown (careful not to burn!) Remove from heat.
Heat remaining T oil in large pot until hot. Cook okra 8 minutes or until browned. Add onion and celery - cook 3 minutes. Add garlic and cook until fragrant.
Stir in roux until vegetables are coated. Stir in tomatoes and then slowly the broth. Bring to boil. Add sausage, pepper, salt, and cayenne. Reduce heat to medium and simmer for 5 minutes. Add shrimp (or cooked chicken) and cook 1 minute or until turns pink. Stir in file` powder.
