Ingredients

  • 1 lb. fresh strawberries, cleaned and hulled coarsely chopped
  • 1 1/3 C. sugar
  • 2 envelopes unflavored gelatin
  • 1 C. heavy cream
  • 3 T. confectioners' sugar
  • 3 oz. semisweet chocolate, melted

Preparation

Step 1

1. In medium saucepan cook strawberries, sugar and 1/4 C. water over medium heat; stir until sugar has dissolved. Place in blender and puree.

2. Sprinkle gelatin over 1/2 C. cold water in small saucepan; let stand 1 minute. Stir over low heat until
gelatin is dissolved, about 1 minute. Remove from heat; stir gelatin into strawberry mixture. Refrigerate 1 hour.

3. In chilled medium bowl beat heavy cream and confectioners' sugar until soft peaks form; fold into strawberry mixture. Divide into ramekins, cover and refrigerate 2 hours, or until well chilled.

4. Place melted chocolate into pastry bag fitted with round tip; decorate each with a chocolate heart.
