Ingredients

  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 tbsp oil
  • 1 1/2 tsp chili powder
  • 1/2 tsp red chili flakes
  • 1 can diced tomatoes, drained
  • 540 ml can lentils, drained and rinsed
  • 1 1/2 cups grated cheddar cheese
  • 2 sliced green onions
  • 4 large tortillas/8 small tortillas
  • Shredded lettuce
  • Chopped tomato
  • Sour cream

Preparation

Step 1

Cook onion and garlic in oil in large pan over medium heat for 5 mins. Stir in chili powder, chili flakes and canned tomatoes. Boil gently until liquid is absorbed, about 5 mins. Stir in lentils during last 2-3 mins. of cooking. Coarsely mash lentils with a potato masher. Stir in cheese and green onions. Divide among tortillas. Top with lettuce and tomato, roll up and serve.
