Ingredients

  • Casserole:
  • 2 Cups shredded cooked chicken
  • 2 Cups crushed tortilla chips
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 Cup corn kernels
  • 1 Cup salsa
  • 1 Cup shredded cheese
  • 2/3 Cup sour cream
  • 1/2 t. chili powder
  • Topping:
  • 1 Cup salsa
  • 1 Cup shredded cheese

Preparation

Step 1

Preheat oven to 350 degrees. Coat 2 qt baking dish with cooking spray.
Combine all casserole ingredients and put in baking dish. Top with topping ingredients.
Cover with foil. Bake 25 minutes. Uncover. Bake until lightly browned (10 min). If desired, top with additional sour cream.
