Beer Bread Muffins (great with the Lasagna Soup)

Ingredients
- 1 1/2 cup flour
- 1 Tbsp. sugar
- 2 tea. baking powder
- 1/2 tea. salt
- 3/4 cup shredded cheddar + extra for top
- 2 Tbsp. green onions, chopped
- 1/4 cup melted butter + 2 Tbsp.
- 6 oz. beer

Preparation
Step 1
Preheat oven to 35- degrees. Spray muffing tins.
Combine flour, sugar, baking powder, salt, cheese and green onions, stir until well combined. Pour in 1/4 cup melted butter and the beer, stir until just combined.
Pour into muffin cups about 1/2 full. Pour remaining 2 Tbsp. butter on tops evenly between muffins. Top with additional cheese.
Bake at 350 degrees for 18-20 minutes until puffed and toothpick comes out clean.
Best right out of the oven.
