Ingredients
- 1 shredded small zucchini
- 1 pouch (6.5 oz.) cornbread mix
- 1 egg
- 1/2 C milk
- oil

Step 1
Microwae shredded zucchini 2 min on medium high. Drain.
Combine zucchini, pouch of cornbread mix, egg and milk. Let stand 5 min.
Heat oil in a pan; drop heaping T batter into hot oil. Cook 1 1/2 to 2 min on each side.
Makes about 14 pancakes.
