- 4 eggs
- 1 cup sugar
- 1 cup honey
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ginger
- 1/2 teaspoon ground cloves
- 3/4 cup brewed coffee
- 3/4 cup orange juice
- 1 apple, peeled, cored and grated

Preparation
1. Preheat oven to 350F. Spray two 9” x 5” loaf pans evenly with nonstick cooking spray.
2. Beat eggs; add sugar, honey, oil and vanilla, mixing well.
3. Sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves. Add the sifted, dry ingredients to the egg mixture. Add coffee and apple, mixing well.
4. Divide batter evenly between two loaf pans. Bake at 350F for 1 hour or until a wooden pick inserted into cake comes out clean.
