Ingredients
- 6 lg eggs
- 1/3 c 2% milk
- 1/2 t dried parsley flakes
- 1/4 t salt
- 6 ozs bulk pork sausage
- 1 T butter
- 1 1/2 c frozen cubed hash brown potatoes, thawed
- 1/4 c chopped onion
- 1 c shreddedcheddar cheese

Preparation
Step 1
Whisk eggs, milk, parsley & salt; set aside. In 9 in cast iron skillet or other heavy skillet, cook sausage over med heat until no longer pink; remove & drain. In same skillet heat butter over med heat. Add potatoes & onion; cook & stir until tender, 5-7 min. Return sausage to pan.
Add egg mixture; cook & stir until almost set. Sprinkle with cheese. Cover & cook until cheese is melted, 1-2 min.
