Ingredients

  • Lemon Glaze:
  • 2 cups flour
  • 1 T baking powder
  • 1/2 t salt
  • 2 T sugar
  • 5 T butter, cold, cut into chunks
  • 1 1/4 c whipping cream
  • 1 cup fresh blueberries
  • 1/4 c fresh lemon juice
  • 2 cups powdered sugar
  • 1 lemon, zest finely grated
  • 1 T butter

Preparation

Step 1

Combine dry ingredients. Using fork or pastry blender, cut in butter to look like course crumbs. Pour int he whipping cream--(reserving a small amount to brush scones before baking). Fold dough together, just to incorporate; do not overwork dough. Carefully fold in blueberries taking care not to mash.

Press dough out on floured surface into a 12x3x 1 1/4" rectangle. Cut into 4 equal squares then into 8 triangles. Place on ungreased cookie sheet, brush tops with reserved cream. Bake 15-20 minutes at 400 degrees.

Prepare lemon glaze--brush scones with glaze and serve warm.
