Ingredients

  • 2/3 loaf Texas toast, cubed
  • 8 oz cream cheese, diced
  • 2 cups blueberries, divided
  • 12 eggs
  • 1 1/2 cups milk
  • 1/3 cup maple syrup
  • Cinnamon
  • Nutmeg
  • 1 cup sugar
  • 1 1/2 cups cold water
  • 2 Tbsp cornstarch
  • 2 Tbsp butter

Step 1

Layer greased 9x13 baking dish wiht half bread cubes, cream cheese, 1 cup blueberries, and remaining bread cubes. In a small bowl, combine eggs, syrup, milk, cinnamon, and nutmeg. Pour over dish and chill overnight. Bake at 350 degrees for 1 hour.
While casserole is baking, make blueberry syrup-- Mix sugar, water, and cornstarch thoroughly. Heat until sugar melts. Add blueberries and butter. Cook over medium heat until thick.
Serve casserole with blueberry syrup.
