Beef: Chinese Pepper Steak

Ingredients
- 3 medium green peppers
- 1/2 pound flank steak, cut into sections against grain
- Mix next 5 ingredients and rub into steak, let stand 15 minutes.
- 1/4 t salt
- 1/2 t sugar
- 1 1/2 T soy sauce
- 1/2 T casking sherry
- 1/2 T cornstarch

Preparation
Step 1
Slice peppers into strips. Put 1/2 T vegetable oil in pan over medium heat. Add peppers. Cook
quickly, stirring. Salt. Remove. Put oil in another pan. Cook beef til brown, about 1 1/2 minutes.
Add peppers.
Serve over rice.
