Chili Suizas Bake

Ingredients
- 2 lbs ground chicken
- 4 poblano peppers
- 1 jalapeno pepper
- 4 cloves of garlic
- One med/large onion
- 12 Tomatillo's or 1 24 oz can crashed tomatillos
- Some cilantro leaves
- 2 cups chicken stock
- 2 tablespoons of honey
- 1 c jack cheese
- 1 c swiss cheese
- Juice of one lime
- Sour cream/creme fresh
- Tortilla chips lightly crushed

Preparation
Step 1
1. In a big pot set to med-high heat - add some extra virgin olive oil. Once hot add the ground chicken and saute.
2. In the broiler - char up the 4 poblano peppers.
3. Finely chop the jalapeno pepper, garlic, and the onion. Once chopped drop into the pot with the chicken.
4. In a food processor add the tomatillos, cilantro (as desired) and puree until smooth. Add this puree to the chicken pot.
5. To this add 2 cups of chicken stock and 2 tablespoons of honey.
6.Once the poblano peppers are chard and out of the oven place the in a bowl and wrap with plastic wrap for a few minutes. This will allow the skin of the peppers to steam and peel easily. Once peeled - deseed the peppers and chop roughly and add to the chili.
7. Take the juice of one lime and add to the chili.
NOW:
1. Transfer this into a casserole dish.
Add some sour cream or creme fresh to the top of the bake in dolps. Top with tortilla chips lightly crushed. Add the grated cheese.
Place in boiler until cheese is melted.
