    six-inch tortillas

  • 1 1/2

    cup finely diced cooked chicken

  • 3

    tablespoon butter

  • 1/4

    cup all-purpose flour

  • 1

    teaspoon salt

  • 1

    cup chicken broth

  • 1

    tablespoon snipped parsley

  • 1

    tablespoon lemon juice

  • 1

    tablespoon grated onion

  • dash paprika

  • dash ground nutmeg

  • dash pepper

  • fat for deep frying

  • grated cheese to add to chicken mixture when placed in tortilla prior to frying

Directions

Wrap tortillas tightly in foil, heat in 350F oven 20 minutes In sauce pan, melt butter; blend in flour & salt. Add chicken broth, cook & stir until mixture thickens. Add parsley, lemon juice, onion, paprika, nutmeg & pepper. Stir in chicken, cool slightly. Place 1 tablespoon chicken mixture on each tortilla. Roll up very tightly, securing w/ wooden toothpicks. Fry in deep hot fat (350F) for 1-2 min. Garnish w/ guacamole.
