Ingredients

  • 4 oz bulk spinach (2 cups)
  • 1/2 cup fresh chopped cilantro
  • 1 garlic clove
  • 1 fresh chili pepper (jalapeno or serrano) with seeds and stem removed
  • 3/4 cup vegetable oil
  • 2 1/2 cups long grain white rice
  • 3/2 cups corn kernals
  • 1 cup thinly cut spinach

Preparation

Step 1

In a blender, combine spinach, cilantro, garlic and chili pepper. Blend until smooth and set aside.
In a medium skillet over medium heat, heat oil. Add rice and cook, stirring constantly until lightly golden, about 5 minutes. Add the vegetable mix, water, salt, and corn and bring to a boil. Cook for 5 minutes. Lower heat to a simmer, covered, until the liquid is absorbed, about 15 minutes. Add the cut spinach before serving.
