Ingredients
- 2 chicken breast halves, skinned and boned
- 1/4 tsp ground nutmeg
- 1/8 tsp salt
- 2/3 cup dry white wine
- 1/4 pound fresh mushrooms, quartered
- 2 Tbsps minced onion
- 1 tsp cornstarch
- 2 tsp dry white wine
- 1 cup hot cooked rice

Preparation
Step 1
Sprinkle chicken with nutmeg and salt.
Coat a heavy skillet with cooking spray; place over medium heat until hot. Place chicken in skillet and cook until browned on both sides.
Add 2/3 cup wine, mushrooms, and onion. Bring to a boil; cover, reduce heat and simmer 14 minutes. Remove chicken and keep warm.
Combine cornstarch and 2 teaspoons wine; stir into mushroom mixture in skillet. Cook, stirring constantly, until thickened and bubbly.
Serve chicken and wine sauce over hot cooked rice.
