Buttermilk Scones

These scones are light and flaky. Best when eaten directly from oven. They are Yummy!

Ingredients
- 3 c All purpose Flour
- 1/3 c sugar
- 2 1/2 t Baking powder
- 1/2 t baking soda
- 3/4 t salt (omit if salted butter)
- 1 1/2 sticks cold unsalted butter
- 1 c buttermilk
- 1 T grated orange or lemon Zest
- 1/2 stick butter for brushing
- 1/4 c sugar for dusting
- 1/2 c mini choc chips

Step 1
preheat oven to 425
mix flour, sugar, baking powder, soda and salt together in a bowl. Add butter cut into small pieces. incorporate butter into flour using your fingers or pastry cutter. Work the butter in until it resembles coarse cornmeal. It's ok if largish lumps of butter remain. Pour in 1 c buttermilk, toss in zest and mix with fork until the ingredients are just moistened and roughly coming together. turn out and kneed a couple turns. separate dough in two halfs. Add 1/2 of choc chips and mix with a couple turns then roll out into small round. Cut in 6 triangles and place on baking sheet with silpat. Repeat with second half. brush with butter and dust with sugar. Bake until barely brown. About 10 minutes
Variation: for Cheese scones - remove Zest, sugar & Chocolate Chipsfrom recipe. Add Grated Sharp Cheddar or other good strong cheddar.
