Ingredients

  • 1 pound dried beans (any one kind or a mixture of many)
  • 1 pound of ham, ham hocks, or smoked sausage
  • 1 cup onions, chopped
  • 1 (14.4 oz.) canned tomatoes
  • 1 teaspoon chili powder
  • Juice of 1 lemon
  • 1 clove garlic, minced

Preparation

Step 1

Soak beans overnight in 2 quart water or bring to a boil, turn off heat and soak for 1 hour.

After soaking, drain water, add 2 quarts of water and meat.

Bring beans to a boil, reduce heat and simmer uncovered for 2-1/2 hours.

After simmering, add onion, tomatoes, chili powder, lemon and garlic. Simmer for another 30 minutes.

Add contents of ham packet 1 to 2 minutes before cooking is completed.

Salt and pepper to taste.
