Ingredients
- 2 Tbsp. vegetable oil
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 1 cup frozen whole kernel corn
- 2 cloves garlic, minced
- 1 (14/5 oz) can diced tomatoes
- 2 cups chopped cooked chicken
- 1 1/2 tea. Creole seasoning
- 1 (32 oz) carton chicken broth
- Sour cream, chopped fresh cilantro, optional

Preparation
Step 1
In a Dutch Oven, heat oil over medium-high heat. Add onion, bell pepper, corn, and garlic, and saute until tender.
Stir in tomatoes and chicken. Sprinkle with seasoning, and saute 2 minutes.
Add chicken broth. Bring to boil. Reduce heat and simmer 20 minutes.
Top with sour cream and cilantro, if desired.
