Blue Cheese Stuffed Buffalo Chicken Meatballs

Ingredients
- Optional additions:
- 1 lb ground chicken
- 3/4 C seasoned breadcrumbs
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1/4 C onion, minced
- 1/4 C celery, minced
- 1 egg
- 1/4 C buffalo sauce
- Blue cheese crumbles
- Blue cheese dressing, for dipping
- Celery sticks
- Additional buffalo sauce
- Sub rolls
- Mozzarella cheese slices

Preparation
Step 1
These require a bit more time than the average baked meatball, but it’s all in the prep. You could make the mixing even quicker by tossing the ingredients into a food processor or stand mixer and blending away, but there’s just something fun about mixing this by hand. Maybe it’s the child in me still wanting to squish and mash play-doh and slime? The up side to this, it is delicious after baked. I’m willing to bet play-doh and slime wouldn’t have the same result after being rolled and baked.
Optional additions:
Additional buffalo sauce
Preheat oven to 350 degrees. Mince onion and celery.
In a large bowl combine: ground chicken, breadcrumbs, egg, salt, pepper, celery, onion and buffalo sauce. Mix by hand until ingredients are combined well.
Grab a portion of meatball mixture. Create a well to place a few crumbles of blue cheese. Shape into a 1 1/2″ ball. Transfer to a parchment lined baking sheet or glass baking pan.
To create a sub: Slice a sub roll length wise. Lay slices of cheese on the inside of your roll, overlapping. Toss meatballs in a small amount of buffalo sauce. Add coated meatballs to sub roll. Add sub to an oven safe container. Broil until cheese is melted. Slice and enjoy warm. *Dip in chunky blue cheese dressing for additional flavor.
