Veggie Soup with Tortellini

Ingredients
- 2 tablespoon olive oil
- 1 medium onion - chopped
- 2 medium garlic cloves - chopped
- 1 medium red pepper - chopped
- 1 medium green pepper - chopped
- 1 medium celery rib - chopped
- 1 carrot - chopped
- 1 can (1 lb 12 oz) peeled & chopped tomatoes
- 5 cups chicken broth
- 1 cup white wine
- 1 1/2 tablespoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (9 oz) chicken tortellini
- 1 medium zucchini
- 1/2 cup grated parmesan cheese

Preparation
Step 1
1. Heat olive oil in large pan over medium heat. Add onion & garlic (more to taste) and sauté 5 minutes. Add red & green peppers, celery, carrot and sauté another 5 minutes.
2. Add tomatoes w/ liquid, chicken broth, wine, HALF the basil, salt, & pepper. Bring to a boil, then reduce heat & simmer, covered, ~30 minutes.
3. While soup is cooking, cook tortellini in boiling water for 10 minutes, then drain (correct as necessary for altitude).
4. Add zucchini to soup. Cook 5 minutes. Add tortellini. Cook 5 minutes.
5. Before serving, add remaining basil & parmesan cheese.
add additional garlic, onion, black pepper, celery, etc., to taste.
